The Curicó Valley, located 115 miles south of Santiago, is Chile's second-largest wine producing region. While Maipo is known for Cabernet Sauvignon and Casablanca for Sauvignon Blanc, Curicó's strength--with 32 different grape varieties planted--is diversity. The valley, a sub-appellation of the Valle Central, was first planted in the 1860s, but vineyard land has expanded dramatically since 1976, when the legendary Spanish producer Miguel Torres discovered the area and chose it to sink his first roots into the New World.
Pairings
For the purposes of food pairing, most Merlots fall somewhere between Pinot Noir and Cabernet Sauvignon in terms of overall power and density. The Aresti Reserva falls in the middle, leaning slightly toward the bolder end of the spectrum. While beef, lamb and pork are obvious contenders for a satisfying culinary partnership with Merlot, this medium-bodied offering from the Aresti family also welcomes less conventional pairings. Salmon, sturgeon and tuna are all worthy companions, especially when small amounts of cured meat or briny olives are incorporated into the preparation.

Winemaker
The Aresti family has been producing wines in Chile's Curicó Valley for nearly 60 years. They settled in the area in 1951 after Vicente Aresti and his father-in-law, Alfredo López, searched all over Chile to find the unique conditions necessary to grow grapes of the highest quality. Today, the winery remains 100 percent family-owned as three generations continue to dedicate their experience and passion to producing top-flight, internationally acclaimed wines. Winemaker Euguenio Eben works overtime to fulfill the family's vaulted expectations for maintaining both value and uncompromising quality.
The Wine
Aresti's Reserva Merlot is hand-harvested from two estate vineyards planted in rich loam and clay-loam soils, and about 30 percent of the wine is aged for four months in 100 percent French oak. The result: aromas of plum and assorted berry fruits form an olfactory foundation from which more subtle nuances of vanilla, cinnamon and white pepper emerge. On the palate, spiced plum, dried cranberry, tart blackberry and conifer flavors give way to subtler notes of toasty vanilla, coffee and dark chocolate. This Merlot is plush and mouthfilling, but, thanks to ripe tannins and balanced acidity, it holds its focus and shape all the way through the lengthy finish.
