Origin
The Mosel River and its tributaries wind through some of the world’s steepest and northernmost vineyard land. While the geography and latitude are important factors, the Mosel wine region’s unique sense of place is most clearly defined by fast-draining, rocky soils and nearly vertical hillside vineyards that are “held up to the sun like toast to a fire.” Situated in the heart of the Mosel, between famed Piesport and Bernkastel, the fractured slate slopes near the township of Lieser produce some of the world’s most extraordinary Rieslings.
Pairings
Bright, clean fruit; crisp acidity; purity of flavor; and low alcohol are all factors that make Riesling arguably the most versatile grape variety for pairing with food. With a broad array of styles, Rieslings range from extremely dry to unctuously sweet. Resting proudly at the dry end of the spectrum, the 2010 Helden will lend exciting contrast to spicy, salty, smoked or well-seasoned preparations, as well as more simply prepared seafood and poultry dishes. Its elevated acidity levels not only respond favorably to higher-acid ingredients such as goat cheese, tomatoes and citrus fruits, but they can also deftly counterbalance rich sauces and fattier foods.

Serve chilled (47°F).
Winemaker
At the Pauly estate, making great Riesling is a family affair. Every task from pruning to bottling is lovingly performed by a member of the family. And experience is passed from generation to generation. While Axel currently oversees winery operations, his father, Rudolph, is responsible for farming the 13 acres of frightfully steep hillside vineyards, and—with more than 60 vintages under his belt—his grandfather, Peter Pauly, still actively provides a lifetime’s worth of knowledge and historical perspective.
The Wine
2010 was a difficult vintage that presented unique challenges to producing dry wines like this “Helden,” which means “Heroes” in German. But, calling on its collective experience (along with ruthless grape selection), the Pauly family rose to the occasion with what could only be described as a “heroic” effort. The tightly wound aromas and flavors include white flowers, quince, barely ripe nectarine and fine-grained metamorphic rock.
