Origin
Napa Valley got its first serious recognition on the world stage when international wine authority Steven Spurrier, a British wine merchant and champion of French wines, organized the now famous 1976 Paris Tasting. Planned as a publicity stunt to bring further recognition to French wines, the judges were all French wine experts and the tasting was done blind. To the world's utter dismay, Napa Valley wines were voted the best red and white, over some of France's greatest Bordeaux and Burgundies.
Pairings
Youthful and exuberant, this wine is the perfect match for simply prepared red meats with high fat content, most notably lamb and beef. Their richness is essential to taming the intensity, concentration and tannin of young Cabernet Sauvignon.

Serve at cool room temperature (64°F).
Winemaker
Andrew Siegel is the brains and muscle behind this new venture. A large part of his business involves purchasing carefully selected lots of already-made wine and bottling them under his own label. This 2007 Big Vine Cabernet, however, was handcrafted from scratch with grapes harvested in Rutherford by the renowned winemaker Scott McCloed, formerly with Rubicon and Niebaum-Coppola.
The Wine
Even as global wine prices continue to slide, it is still difficult to find excellent Napa Valley Cabernet for under $25. Exception: the 2007 Big Vine. This rich, full-flavored Cabernet was fermented in a combination of stainless steel and wood, then aged for 21 months in two-year- old French oak barrels. Delivering way beyond expectation, it boasts aromas of black current, cherry liqueur, cedar and vanilla spice. On the palate, look for generous flavors of cassis, red and black cherry, tobacco and a peppery spice.
