Mendoza, located 750 miles northwest of Buenos Aires and 125 miles northeast of Santiago, Chile, is Argentina's largest winemaking region, accounting for 70 percent of the country's total wine production. Interestingly, Mendoza is also one of the driest places on earth. With peaks as high as 22,841 feet, the Andes reach up to capture all the precipitation moving east from the Pacific, holding it in the form of snow and ice. Its gradual melting makes this high desert landscape one of the world's most prolific wine regions.
Pairings
Malbec is a highly drinkable red wine and an amiable tablemate for many foods. In fact, it is one of the few red wines that can pair well with reasonably spicy cuisine, such as Mexican, Cajun and Indian. But Malbec delights in the company of simply prepared beef--steak, prime rib, pot roast--and also shows a very deep fondness for gamier meats, including lamb, venison and, yes, bison.

Serve at cool room temperature (64°F).
Winemaker
The abundance of water coupled with 320 days of sunshine each year is part of what brought Don Fioravante Sottano from Veneto, Italy to Mendoza in 1890. An early settler, he promoted the region's agricultural potential and, inspired by the winemaking tradition in his homeland, was among the first in Mendoza to plant grapes. His son Ricardo expanded the family vineyards and winery into a full-scale commercial venture, before turning it over to his children Diego, Pablo and Mauricio. Today, a new generation oversees the state-of-the-art facility and some of South America's most highly prized vineyard land.
The Wine
Pierre Galet, a renowned French ampelographer (one who identifies vine species and varieties), has identified over 2,000 mind-numbing synonyms for Malbec, but the most common names are Cot or Pressac in Bordeaux and Auxerrois in France's Cahors region. No matter what you call it, this heat-loving variety--which struggles to ripen in France--has found fame and glory in Argentina's sun-soaked regions, like Mendoza. Bodega Sottano's 2007 Reserva offers aromas of blackberry, smoky plum and white pepper that set the stage for the spicy black cherry flavors to follow. The satisfying finish reveals sound structure, balanced acidity and ripe tannins.
