Napa Valley is the heart and soul of the California wine industry. And, in 1986, Joe Cafaro finally got his own piece of it. The Cafaro Family Vineyard is located just south of Napa's famed Stags' Leap District, where Joe feels right at home. As he says, "By selecting, developing and harvesting our own vineyard, we are taking a very holistic approach to winemaking--one that allows us to have maximum control over both the style and flavors of every case we produce."
Pairings
Young Cabernet Sauvignon is ripe, concentrated and powerful. But as it matures in the cellar, a fine Cabernet develops sublime elegance and grace. As the aging process slowly unravels tannins, it also coaxes out subtle nuance and complexity that makes the wine a far more interesting and flexible companion at the table. This enhanced compatibility with food calls for delicate preparations that will let the wine stand out. Consider unadulterated prime rib, a plainly broiled veal or lamb chop, a simple beef stew, or perhaps a lean steak.

Serve at cool room temperature (62°F).
Winemaker
One of California's most experienced oenologists, Joe Cafaro has been making wine in the Napa Valley for almost 45 years. His resume includes work at the landmark wineries Acacia, Chappellet, Dalla Valle, Keenan, Oakville Ranch and Robert Sinskey. In 1986, he figured it was time to produce wines under his own label, and a decade later he planted his very own 15-acre vineyard. Believing that it is "the winemaker's role to unlock the inherent expression that exists within a grape," Cafaro is fully committed to handcrafting small lots of elegant, foodworthy wines. Proof of his "less is more" philosophy, he made just 100 cases of this Cabernet Sauvignon.
The Wine
Alta Tierra, meaning "high ground," is only bottled in the best vintages, from the finest lots produced that year. This first incarnation of Alta Tierra is a blend of Cabernet Sauvignon (92 percent) and Petit Verdot, which reflects the ideal ripeness achieved during the 2001 vintage. Having spent two years in barrel, four years in bottle and another four years being cellared under perfect conditions, this remarkable value is now offered at the peak of maturity. Look for ripe aromas of black cherry, red currant, plum and brown spices. On the palate, patience has been rewarded with fully resolved tannins supporting flavors of dark fruits, caramel, coffee and vanilla spice.
