Manchester Ridge is an unusual vineyard located in Mendocino County, set among persimmon and chestnut orchards on ridges close to and paralleling the coast. At an elevation of 2,000 feet above sea level, the vineyard stays around 400 feet over the fog line, giving it access to the all-important sunlight that allows grapes to ripen in what can often be a cool, windy locale. The Chardonnay and Pinot Noir grown here get a long hang time because of the cool temperatures, allowing great flavor maturity without losing acidity.
Pairings
Richer dishes underscore this wine’s fuller body and creamy texture. In addition to full-flavored seafood, shellfish and poultry preparations, many veal and pork entrees make for a successful match, especially when prepared simply. This Chardonnay adores butter, cream and mild cheeses, and also works well with lightly toasted nuts. For more daring matches, consider pumpkin curry; a salad tossed with crab, mango and avocado; or seared ahi tuna with fresh corn and crispy pancetta.

Serve at cool room temperature (64°F).
Winemaker
Calstar’s owner and winemaker, Rick Davis, is best known for finely wrought cool-climate wines like Pinot Noir and Chardonnay from the Sonoma Coast, where he learned his trade at celebrated cellars like Flowers and Tandem under the winemaker Greg LaFollette. Davis developed Calstar as a way to push forward with his own ideas and techniques, and he has found a following of committed wine fans who love the precision and verve of his cool-climate wines.
The Wine
Ambitious California winemakers seek “marginable” sites that push viticulture to its edges in pursuit of the finest, most radiant and rarest expressions. Manchester Ridge is such a vineyard, and this is such a wine. Not many places can produce Chardonnay that is as densely packed with racy layers of lemon, pear, vanilla and orange zest yet still delivers a richly textured, intense and creamy body.
