Faugères is a relatively small but high-quality winegrowing region in the French Languedoc. The soils of Faugères are composed of extremely rugged schist that is tough for grape vines to penetrate and imparts the wines with a bracing stony character. Faugères reds are usually made with indigenous Carignan and Cinsault grapes blended with Rhône varieties like Grenache and Syrah. Wines from this region can be relatively difficult to find in the United States because the French buy most of them before they can be exported.
Pairings
Match this wine with herbed meats like roast chicken with rosemary and thyme or an herbed pork loin to emphasize its classic Languedoc garrigue notes, or pair it with a slightly sweet dish like mu shu pork or duck breast with a cherry compote to showcase its deep fruit.

Serve at cool room temperature (62°F).
Winemaker
Château Chênaie is run by winemaker Eric Chabbert, whose family has controlled the property for five generations. The fractured schist vineyards are located high in the foothills of the Cévennes Mountains, near the small village of Caussiniojouls. Chabbert has earned many accolades and awards for his red and white'Conviction' wines, as well as the estate's flagship red,'Douves.'
The Wine
This spicy Languedoc red blend has enticing aromas of thyme, rosemary and lavender herbs, black plums, huckleberries and pepper with a hint of soy. In the mouth it shows deep blackberry, black currant and black cherry fruit with dried herb and mineral notes on the finish.
