Napa Valley is the heart and soul of the California wine industry. Running north to south, the valley is 34 miles long and defined by mountain ranges and its proximity to the Pacific Ocean. Its temperate climate, coupled with over 30 different soil types, make Napa Valley one of the world’s premier wine regions. Within “The Valley,” there are 15 distinct American Viticultural Areas (AVA s), each with a unique microclimate, running from the warmer, drier locale of Calistoga at the valley’s northern end to the cool, windy and foggy hills of Carneros, set right up against San Pablo Bay.
Pairings
With its soft, plush, polished tannins, this delicious Cabernet is surprisingly versatile. However, its intense, focused palate asks for a meat dish of the same concentration, so red meat—from grilled steak to tender short ribs—will be well served by the wine’s forward fruit and acidity. But given the soft, rounded tannins, lighter meats like veal and pork will also work well. Fortify them for the wine’s charge by seasoning amply with dried herbs or garlic, or saucing them with a jus or red wine reduction, and play to the wine’s earthy side with mushrooms or root vegetables on the side.

Serve at cool room temperature (64°F).
Winemaker
Banshee is a team of Napa Valley winemaking insiders who leverage their connections with the best growers and producers in the valley to source high-quality lots of wine. They find the buried treasures in other wineries’ cellars, and negotiate to purchase some portion of the wine that the other winery can live without, or perhaps can’t find a suitable home for. For the few barrels they buy, the Banshee team skips over thousands that don’t meet their specifications. Then, using their winemaking expertise, the Banshee boys blend the wines into their own harmonious mélanges, producing wines that are both original and expressive.
The Wine
Rather than expressing a single vineyard or a unique place, the Banshee team has assembled a wine that rather speaks to many facets of Napa Valley. In this wine are components from famous vineyards like Stagecoach and Ink Grade as well as fruit from emerging regions like Coombsville, which sits in a cool enclave just east of the town of Napa. The combination of rugged hillside and gentler valley floor, of warmer up-valley fruit and cooler stuff from the south results in a rich, supple and deeply savory red with lots of cedar, leather and black olives over a deep core of black currant. The Banshee team believes this is the best Cabernet they’ve ever created, and we don’t disagree.
