When it comes to wine, Tuscany is most celebrated for Chianti, the legendary wine region that encompasses the rolling hills between and around the provinces of Florence and Siena. The undulating topography, rocky soils and continental climate are ideally suited for wine. This wine, however, is not labeled as Chianti, as it is what’s called a “super-Tuscan,” since it uses grape varieties that are not legally entitled to be called Chianti. Nevertheless, it comes from the hills just outside of Florence, where clay-limestone soils produce both reds and whites of wonderful clarity and verve.
Pairings
The Diadema D’Amare Bianco will be lovely alongside seafood, poultry or light pork dishes. Scallops and salmon have a satiny texture that will harmonize beautifully with the wine’s richness; leaner fish prepared with butter, cream or olive oil will make a good textural match as well. Viognier-based wines pair well with orange citrus fruits (tangerines, kumquats, oranges), tropical fruits (mango, melon) and warm spices like cinnamon, cloves and allspice. Try the wine with sautéed shrimp with orange, fennel and ginger; or Vietnamese style pork chops with lemongrass and fish sauce.

Serve well chilled (47°F).
Winemaker
Diadema is the wine project of Alberto Giannotti, who made his fortune in manufacturing shoes. He is also heir to the hilltop estate of Villa dell’Olmo in Impruneta, near Florence, which had been in his family since 1735. The name Diadema comes from a classical term used by Roman emperors for a piece of jewelry worn on their heads as a symbol of power, after crowns had become unfashionable. Giannotti has taken wealth and opulence as driving themes in his wine company, creating wines not only with ambitious quality, but with grandiose design, including personalized crystal- and diamondstudded bottles that cost as much as $16,000 each.
The Wine
While Diadema may sound like a stunt of the rich and famous, there is merit to the wines, which are made by one of Italy’s most highly regarded oenologists, Stefano Chioccioli. For this white, he sourced the rocky hills around the estate to make an unusual blend of Chardonnay and Viognier. The latter brings floral high tones, exotic tropical fruit, spice and perfume, while Chardonnay provides structure and acid, along with elements of citrus and cream. The unusual step of letting some of the grape skins come into brief contact with the juice during fermentation adds greater flavor, color and complexity.
