McLaren Vale, extending south from Adelaide, is one of Australia's most important viticultural districts. The region's vines take root in a narrow strip of rolling hills nestled between the heights of the Southern Mount Lofty Ranges and the temperate waters of the Gulf of Saint Vincent. While its Mediterranean climate and diverse soil types are home to world-class Chardonnay and Sauvignon Blanc, McLaren Vale is best known for Shiraz and Cabernet.
Pairings
This flavorful blend of 56 percent Shiraz and 44 percent Cabernet Sauvignon provides a wealth of pairing opportunities, but, given their full-flavored richness, lamb and beef go straight to the front of the line. While stews and slow braises work well with the Coates Consonance, grilling best reflects the wine's toasty oak flavors, a byproduct of oak aging. Grilling also adds a singed, bitter quality to the food, which helps to offset the tannins harbored in substantial red wines.

Serve at cool room temperature (64°F).
Winemaker
Owner and winemaker Duane Coates holds graduate degrees in business administration and enology from the University of Adelaide. In an effort to expand his winemaking perspective, he has worked at Château de Messey in Burgundy, Domaine Francois Villard in the Rhône Valley and Fladgate in Portugal's Douro. A beneficiary of this international exposure, Coates strives to bridge the gap between Old World complexity and restraint and Australia's bold, fruit-driven style. He is also an ardent crusader for sustainable viticulture.
The Wine
"Consonance," which means "harmony" or "accord," is an apt name for a wine that brings together Shiraz and Cabernet, as well the divergent winemaking styles of Europe and Australia. The organically grown fruit is sourced from the Stachan Vineyard in the foothills of Willunga. This vintage boasts complex aromas of blackberry, blueberry, spiced plum, milk chocolate and bay leaf, along with a whiff of smoke. On the palate, generous dark fruit flavors are gently supported by fine-grained tannins and just the right amount of acidity. The wine is powerful and concentrated, but by no means overwhelming, with enough energy in the mouth to maintain its precision and focus.
