Produced for more than 10 centuries in the northeastern Italian province of Treviso, Prosecco was almost exclusively a sweet sparkling wine in the style of Asti Spumante until the 1960s. Since then, it’s become drier and more complex, thanks to efforts by Prosecco producers to better define its ideal terroir. The area designated for making Prosecco surrounds the towns of Valdobbiadene and Conegliano. Hilly Valdobbiadene, where the claylike, calcareous, low-nutrient soil is fairly shallow, is widely considered to be the scenic region’s top growing area.
Pairings
While this sparkling wine pairs beautifully with breakfast fare like eggs Benedict or smoked or poached salmon, it is capable of much more. With its firm, focused palate and minerally backbone, it goes just as well with grilled freshwater fish, steamed mussels or clams, and longcured ham or prosciutto. And its fine bubbles make it a natural match for fried foods.

Winemaker
Contarini is a historic villa dating back to the 19th century as well as a winery dedicated to the production of superior sparkling Prosecco and gorgeous still wines from a number of red varieties common to the Veneto region. Contarini’s winemakers have all received the highest training at the respected wine school at Conegliano. Their winemaking processes are steeped in tradition, while emphasizing the precision made possible by modern techniques.
The Wine
Drink this luminous sparkler as a celebratory wine or enjoy it as a vivid and energizing aperitif before dinner—no special occasion required. It boasts a gorgeous robe of super-fine bubbles, a pale straw color flecked with green, and aromas of almond, lemon blossom and green apple. Displaying flavors of red apple, citrus, honeysuckle and cream, it finishes quite dry.
