Napa Valley is the heart and soul of the California wine industry. Running north to south, the valley is 34 miles long and defined by mountain ranges and its proximity to the Pacific Ocean. Its temperate climate, coupled with over 30 different soil types, make Napa Valley one of the world's premier wine regions. Within "The Valley," there are 15 distinct American Viticultural Areas (AVA s), each with a unique microclimate. The fruit for this 2008 Cabernet was organically grown in the Rutherford district.
Pairings
Jody Harris's family has been raising cattle since the 1930s and runs a huge steakhouse in the heart of California farm country. Her business partner, Dan O'Brien, is the wine director for Murray Circle restaurant in Sausalito, renowned for its pasture-raised lamb and grass-fed beef. While it is not a crime to, for example, sip it with fillet of sole, the winery principals had much weightier ambitions. Yes, steaks and other cuts of beef (and lamb) sizzling from the grill are the perfect call. Not only are the flavors and textures an ideal match, the richness of grilled meat will help to cushion the tannic properties of this young wine.

Serve at cool room temperature (62°F).
Winemaker
Cultivar is a partnership between Jody Harris of Harris Ranch fame, whose family has been raising cattle for going on 80 years, and Dan O'Brien, who is Wine Director at Cavallo Point Lodge's Murray Circle Restaurant, which received its first Michelin star last year.
The Wine
Crafted from 100 percent Cabernet Sauvignon organically grown in Rutherford, the 2008 Cultivar was fermented in stainless steel and aged in French oak barrels, 40 percent new and 60 percent neutral. An outstanding value from Napa Valley, this wine features explosive aromas of black currant, black raspberry, fennel and sweet cedar. On the palate, loads of black currant, baked plum, violet, camphor and bitter chocolate set the stage for beautiful texture, a full body and a long, opulent finish. The tannins are definitely on the muscular side but will melt away when paired with well-marbled red meat. Total production: 538 cases.
