Coteaux du Languedoc, described as a giant southeastfacing ampitheater, is considered one of France’s most exciting wine regions. It stretches 120 miles east to west, along the Mediterranean coast from the outskirts of Nîmes to the gothic village of Narbonne, and inland to the slopes of the Cévennes Mountains. The foothills just west of Montpellier, home to Domaine de Saumarez, feature a warm, sunny climate coupled with complex, rocky soils that consistently produce sharply etched wines of substance and character.
Pairings
While this wine is especially well-suited to lamb—in braises, stews and slow cooked roasts—it is also nimble enough to pair with veal, pork, rabbit, game birds and all types of poultry. It would, for example, make an excellent accompaniment to a festive turkey, especially when served with mushroom stuffing and caramelized root vegetables, such carrots, parsnips and beets. It also has the wherewithal to go with mild curries and tagines, as well as an array of lightly aged soft and semi-hard cheeses.

Serve at cool room temperature (64°F).
Winemaker
In 2004, the Williamsons turned in their calculators, quit their office jobs, bought property in the south of France and settled into a new life as grape growers and winemakers. The learning curve for Robin (a banker from the British island of Guernsey) and Liz (an accountant who grew up in New Zealand) was steep, but thanks to keen intelligence, lots of hard work and an extraordinary piece of real estate, they have been wildly successful.
The Wine
The unique Aalenien soils in Faugères are an unforgiving, rocky mix of marl, quartz, schist and granite that assures low yields, concentration and purity of fruit. The wine offers gorgeous cherry, black raspberry and plum fruit, with brown spices, light truffle, white pepper, smoke and a diverse array of Provençal herbs. It is rich and silken in texture, yet displays focus, precision as well and a pleasant juiciness.
