A stone’s throw from the salty waters of the Bassin de Thau, Picpoul de Pinet, a subappellation of Coteaux du Languedoc, extends along the Mediteranean coast midway between Montpellier and Béziers. Sanctioned to make white wines only, its wines must by definition be made from 100 percent Picpoul. The relatively cool coastal climate and fast-draining soils comprised mostly of limestone, sand and clay provide ideal conditions for producing this crisp and refreshing wine.
Pairings
With its brisk, lively flavors, Picpoul de Pinet makes for an ideal aperitif or invigorating summer quaff, but its true calling is with raw or simply prepared shellfish and seafood. It is especially well-suited to oysters on the half shell, steamed mussels and grilled scallops. The Domaine Guillemarine will also complement zesty vegetable dishes, salads and tangy fresh cheeses. And local Languedoc residents regularly employ it as a refreshing, thirst-quenching, low-carbohydrate alternative to an icecold pilsner- or lager-style beer.

Winemaker
The 72-acre vineyard, of which 25 are planted to Picpoul, has been passed down through the Allies family for six generations. While most of the grapes are sold to the local cooperative in Pomerols, the Allies keep the finest fruit for themselves and bottle it under the Domaine Guillemarine label, a conjunction of the owners’ first names, Guillaume and Marie. Now, their son, Guillaume, lives on the property, bringing an even more hands-on approach to grape-growing and winemaking.
The Wine
The Picpoul grape is indigenous to southern France and is grown from the Languedoc to the Rhône Valley. It remains one of the permitted grape varieties in Châteauneuf-du-Pape, but it’s rarely used there. Picpoul is grown at its very best in the tiny appellation of Picpoul de Pinet. Expect charming fragrances of apple, melon, lime and papaya to rise gently from the glass as brisk acidity and a chalky minerality underpin flavors of just-ripe peach, honeydew and lemon zest. While quite delicate, the Domaine Guillemarine exhibits unexpected weight and texture, which are held in check by a lively, penetrating tartness.
