This Pinot Noir hails from the commune of Chorey-les-Beaune, just north of the city of Beaune, where rain and rivers have carried wine-loving limestone deposits east of the RN-74 highway that is generally considered the border of Burgundy. The wines of Chorey-les-Beaune are plump with ripe fruit, silky in texture and considered by many to be among the best values of this rarified region.

Pairings

In its youth, while still a bit tannic and focused, this red is best paired with braised beef or lamb or seared duck breasts, ideally accompanied by roasted vegetables, red wine and herbs. Once mature, it will also pair well with strong, creamy cheeses like Epoisses.
Serve at cellar temperature (61°F).

Winemaker

Michel Gay and his son Sébastien run one of the highest regarded domaines in Chorey-les-Beaune. This estate is known for making very up-to-date wines that are well-concentrated and sturdy in structure. In some cases they really need a few years to open up, and they age very gracefully. Michel's brother François Gay operates a separate domaine nearby.

The Wine

This fine Burgundy has spicy incense-like aromas with apple skin, pomegranate, black cherry, mineral and forest floor notes, and flavors of blackberry, orange zest, ripe plum and cocoa powder. As in Bordeaux, the great weather during Burgundy's 2005 season produced very special wines that required minimal manipulation. As one vigneron put it, "I kept going to the vineyard every day, but returned having done nothing."
