Languedoc, located in southern France, was long regarded as a second-tier wine region. Today, with the infusion of new capital and expert techniques from neighboring areas, the Languedoc is proving to be a premier growing region for heat-tolerant grapes, including varieties traditionally grown in the Rhône Valley farther east. Domaine Puech Chaud is located near the town of Nîmes in a relatively cool micro-climate of this appellation and features limestone and gravel soils suitable for growing both red and white grapes.
Pairings
Pair this generous white with a bouillabaisse-style seafood stew, clams casino, oysters Rockefeller or even richer dishes like roast chicken with thyme and lemon or Moroccan-style chicken tagine.

Serve well chilled (47°F).
Winemaker
The renowned Northern Rhône vigneron René Rostaing and his wife purchased the modest Domaine Puech Chaud in the late 1990s, recognizing the tremendous potential of this underappreciated winegrowing region. The wines produced at Puech Chaud are stylistically consistent with those Rostaing makes in the Rhône: concentrated but elegant, expressive but subtle and sensual yet cerebral. Rostaing employs a number of modern techniques in the cellar, but he doesn't harvest his grapes when overly ripe, and he seasons his wines with only moderate amounts of new oak.
The Wine
This white blend of Grenache Blanc, Rollé (known in Italy as Vermentino) and Viognier has lucid, layered aromas of grapefruit, ginger, candied lemon rind, honeysuckle and golden plum. It is precise and focused with exceptional textural richness and flavors of mineral-laden lemon curd, Queen Anne cherry and lime blossom.
