Saint Chinian is located in the middle of the Languedoc on France's southern Mediterranean coast. Saint Chinian borders the other AOCs, or certified designations of origin, of Minervois and Faugères, and at least part of the region shares the granite schist soils that dominate Faugères and lend a sturdy, stony crispness to its red wines. The rest of the district has limestone soils, which impart the wines with a lively elegance and perfume. The best reds, like this one, are blends of indigenous varieties like Carignan and Cinsault and more recent Rhône arrivals like Syrah and Grenache.
Pairings
Enjoy this red with charcuterie, grilled lamb chops seasoned with thyme or rosemary, a hearty cassoulet or duck confit.

Serve at cool room temperature (64°F).
Winemaker
Domaine du Landeyran occupies just more than 30 acres near the small village of Saint Nazaire de Ladarez within the Roquebrun sub-region. Located near the border with Faugères, it has the same fractured schist soils that predominate in that region. The domaine is owned by Patricia and Michel Soulier, who oversee every aspect of production, from vineyard to bottle. They matured this wine in steel tanks, rather than in oak barrels, to retain the clarity of the domaine's terroir.
The Wine
This classic Languedoc red has a deep crimson color and aromas of cocoa, red and black pepper, raspberry, black olive, thyme and gunflint, and flavors of violet, berries, plum, licorice and cinnamon. It's silky in the mouth and finishes with stony minerality.
