Pezenas, located 80 miles north of the Spanish border, is one of several sub-appellations of France's Languedoc region, all of which extend along the coastal plains of the Mediterranean Sea between the towns of Narbonne and Nîmes. Even though it did not receive official recognition as an individual wine region until 2007, Pezenas's grape-growing heritage dates back to the seventh century B.C. Concentrated and complex wines are a natural byproduct of Pezanas's warm, dry growing season and intricate mélange of soil types.
Pairings
This rich, spicy, Syrah-based blend has never met a piece of meat it didn't like. From beef to lamb, from pork to venison, rich proteins of all types are handsomely rewarded. Highlight the wine's intrinsic peppery character by adding herbs and spices to sauces, marinades and accompanying side dishes. Earthier, French-style spices, like herbes de Provence, are especially well suited to this blend. Built for the long haul, this wine will benefit greatly from large glasses and a vigorous decanting an hour before serving.

Serve at cool room temperature (64°F).
Winemaker
In 2000, Daniel le Conte des Floris left his job as editor of the French wine magazine La Revue du Vin de France. After decades of writing about the efforts of others, he retired to the countryside to tend his own 17-acre vineyard and to make wine himself. Daniel, who also owns a popular wine bar in the town of Pezenas, is proud to now be part of a determined and passionate community that has been producing wine for 27 centuries.
The Wine
Daniel usually releases three separate bottlings, each featuring his vineyard's unique soil types and the grape varieties planted therein. The Carbonifère, his most precious and age-worthy wine, is comprised of mostly Syrah, along with small amounts of Grenache and Carignan. These ancient Syrah vines grow in rocky, well-drained soils laden with schist deposited during the Carboniferous Period, which ended some 290 million years ago. Thus the name Carbonifère--a wine for the ages! Aromas of lightly baked blackberry and blueberry, thyme, dark chocolate and seared meat slowly build. Expect more of the same on the palate, along with enticing notes of soy, coffee and tar.
