Pezenas is a sub-appellation of southeastern France's Languedoc region. Even though it did not receive official recognition as an individual wine region until 2007, its grape-growing heritage dates back to the seventh century B.C. It is one of several Languedoc sub-appellations, all of which are located on the coastal plains along the Mediterranean Sea between the towns of Narbonne and Nimes. Concentrated and complex wines are a natural byproduct of the area's warm, long and dry growing season and notoriously multifarious soils.
Pairings
This wine's inherent earthiness begs for hearty dishes with bold flavors. Lamb or pork preparations, preferably with a rustic edge to them, are especially worthy tablemates. Full-flavored vegetable dishes, embellished with a little cheese, are also excellent accompaniments. With its high acidity and balanced tannins, the Homo Habilis also pairs well with composed salads, especially those featuring hard cheeses or smoked poultry, and dressings that are not too sharp.

Serve at cool room temperature (62°F).
Winemaker
In 2000, Daniel le Conte des Floris left his job as editor of the French wine magazine La Revue du Vin du France and moved to the Languedoc. After decades of writing about other winemakers' efforts, he retired to the countryside to tend his own 18-acre vineyard and make wine himself. Daniel also owns a very successful wine bar in the town of Pezenas and has been welcomed as an integral part of a community that has been making wine for the past 27 centuries.
The Wine
The Homo Habilis is blend of 80 percent Syrah and 10 percent each of Mourvèdre and Grenache. The grapes were hand-harvested and allowed to ferment very slowly over the course of five weeks, before spending three years in barrel. The wine displays aromas and flavors of baked plum and black raspberry, mint, thyme, bitter chocolate, lightly smoked game and singed meat. Full-flavored but focused, this bottling is a savory, gamy and low-toned offering that promises plenty of food-friendly enjoyment.
