Pouilly-Fuissé, located midway between Beaune and Lyon, is the most distinguished appellation in Burgundy's Maconnais region. 135 million years ago, during the Jurassic period, the area lay under an inland sea. Over time, thick layers of calcareous sediments were deposited and later turned to limestone, which is the defining characteristic of the region's flinty, Chardonnay-based wines.
Pairings
The wine is at its best with simply prepared fish and chicken dishes because it has the ability to hold its own flavor without interfering with the flavor of the food. Because of its delicacy and crispness, it is also a natural with oysters and shellfish. While the wine's subtle nuances may be sacrificed, it can also be used to cut through rich butter and cream sauces. And if you really want to make this Pouilly-Fuissé feel at home, consider local favorites like Chevreton de Macon (a goat's milk cheese), escargots or frog's legs.

Winemaker
Dominique Cornin is among the fourth generation in his family to tend vines near the village of Chaintré. At the tender age of 7, Dominique began working in the vineyards and in the cellar, and took over completely from his father in 1983. Like many vignerons in Fuissé, Cornin farms dozens of small vineyard plots in and around the village. Even though they have been farming organically for many years, the vineyards were not officially certified as organic until 2009. Now, Dominique's 25-year-old son, Romain, joins him in co-managing their vineyards and modest winery, which produces only 5,400 cases each year.
The Wine
The Cornins lovingly guided this 2008 Pouilly-Fuissé through a slow, indigenous yeast fermentation to coax out great delicacy and purity. It was then gently racked off of its primary lees at the new moon. To highlight the natural beauty of their Chardonnay fruit, this Pouilly-Fuissé was aged only in large cement vats and neutral barrels. It features bright aromas of Meyer lemon, citrus blossom, honeysuckle, wet stone and a distant whiff of butter. On the palate, look for more citrusy flavors, along with notes of underripe pineapple, Queen Anne cherry and flint. At once generous and well-focused, this is a memorable expression of authentic, unadulterated Chardonnay.
