Napa Valley is the heart and soul of the California wine industry. Running north to south, the valley is 34 miles long and defined by mountain ranges and its proximity to the Pacific Ocean. Its temperate climate, coupled with over 30 different soil types, make Napa Valley one of the world’s premier wine regions. Within “The Valley,” there are 15 distinct American Viticultural Areas (AVAs), each with a unique microclimate.
Pairings
For the purposes of food pairing, most Merlots fall somewhere between Pinot Noir and Cabernet Sauvignon in terms of overall power and density. The Emmolo Merlot falls in the middle, leaning slightly toward the bolder end of the spectrum. While beef, lamb and pork are obvious contenders for a satisfying culinary partnership with Merlot, this medium-bodied offering will also be wonderful with generous and creative spice rubs and marinades that add complexity and perfume.

Serve at cool room temperature (62°F). Decant for one hour before serving.
Winemaker
The Napa Valley as we know it is a relatively young place. In 1975, there were only 25 wineries there, and today, when the subject of legacy and tradition in the valley comes up, most producers can only claim a 20-year history or less. This is not the case with Cheryl Emmolo, founder and owner of Emmolo Wine Company. Her family’s history is written into the fabric of the valley, as her grandfather, Salvatore, founded a rootstock nursery back in 1923. Cheryl’s father continued the business, but also grew grapes on a 43-acre plot in the prime Rutherford district. Cheryl founded Emmolo in 1994 to fulfill her lifelong ambition to make wine and to continue the family’s legacy for her children.
The Wine
Aromas of plum and assorted berry fruits form a base from which nuances of vanilla, allspice and bittersweet chocolate emerge. On the palate, dark cherry and black currant give way to subtler notes of toasty vanilla, coffee and dark chocolate. This Merlot is plush and mouth-filling, but, thanks to ripe tannins and a balanced acidity, it holds its focus and shape all the way through the lengthy finish.
