Located in southeastern France, 70 miles north of the Spanish border and 20 miles inland from the Mediterranean Sea, Faugères is a sub-appellation of the Languedoc-Roussillon region. Defined by outcroppings of schist pushed to the surface 20 million years ago, Faugères is home to low-yielding vines that struggle on steep, rocky hillsides to produce dense, concentrated wines. Its mountainous terrain, proximity to the sea, and hot, sunny summers, make it ideal for growing red grape varieties like Syrah, Grenache, Mourvedre and Carignane.
Pairings
The Les Douves features a combination of dark fruit, spice and earth, making it an excellent match for game, lamb and beef. But it will also flatter roasted herb chicken, spicy paella, coq au vin, wild mushroom risotto, or grilled vegetables marinated in olive oil, salt and herbes de Provence.

Serve at cool room temperature (64°F).
Winemaker
Château Chenaie is housed in the 12thcentury castle in Caussiniojouls, which in English means “limestone plateau in the clouds.” Aptly named, this tiny hillside village is dominated by the castle’s 60-foot-high keep, the ground floor of which currently serves as a barrel room for aging the winery’s red wines. Chenaie is French for “oak”; the tree is displayed on the crest of the Chabbert family, which has owned the castle for five generations. Vineyard and winery operations are now in the very capable hands of descendants Eric, Mary and Cyril Chabbert.
The Wine
The Château’s finest cuvée—Les Douves—is comprised primarily of Syrah, with small amounts of Grenache, Mourvedre and Carignane adding depth and complexity. The 2007 vintage features spicy red and black fruits along with measured low-toned notes of lightly smoked meat, mushrooms, dried herbs and freshly ground pepper. Medium-tofull-bodied, it is generous in the mouth with moderate tannins and a long, satisfying finish.
