Pouilly-Fuissé, located midway between Beaune and Lyon, is the most distinguished appellation in Burgundy’s Maconnais region. During the Jurassic period, the area lay under an inland sea. Over time, thick layers of calcareous sediments were deposited and later turned to limestone, which is the defining characteristic of the region’s flinty, Chardonnay-based wines.
Pairings
The wine is at its best with simply prepared fish and chicken dishes because it has the ability to hold its own without interfering with the flavor of the food. Thanks to its delicacy and crispness, it is also a natural with oysters and shellfish. While the wine’s subtle nuances may be sacrificed, it can also be used to cut through rich butter and cream sauces. All of this is possible because of this Chardonnay’s great sharp acidity, which keeps it focused against all manner of richer foods, all the while making those dishes more palatable.

Winemaker
Based in the town of Vergisson in Maconnais, the Carrette family owns a midsize (32-acre) estate of vineyards spread across four distinct appellations: Pouilly-Fuissé and Saint Véran, which are world famous, as well as Mâcon-Solutré and Mâcon-Milly- Lamartine, which are lesser known. All are top-notch sites, easily ranking among the best in the world for growing Chardonnay. Jean-Michel and Hervé Carrette do nothing out of the ordinary in their vinification of the grapes, but rather concentrate on obtaining extraordinary grapes through meticulous vineyard work, low yields and careful handling.
The Wine
The Carrettes refer to their Pouilly- Fuissé as “king of the Maconnais wines” and note that while delicious young, it has the greatest longevity of all the wines they make, lasting up to 30 years when well-cellared, in some cases. To highlight the natural beauty of their Chardonnay fruit, this Pouilly- Fuissé was aged only in large cement vats and neutral barrels. It features bright aromas of lemon, acacia flower, candied apple, almond, cinnamon and minerals. On the palate, look for more citrusy flavors, along with notes of Meyer lemon, apple, bread and honey. At once generous and well-focused, this is a memorable expression of authentic, unadulterated Chardonnay.
