The Burgundy sub-zone of Chablis is distinguished primarily by the Kimmeridgian limestone soils, comprised of the fossilized shells of tiny mussels and other shellfish that lived there when the area was underwater. These distinctive soils impart Chardonnay from Chablis with intense mineral flavors, which winemakers showcase by fermenting the wines in stainless steel with sparing use of oak in fermenting and maturing the wines. This Chardonnay comes from the Premier Cru (First Growth) Fourchaume vineyard.
Pairings
Chablis is a medium-weight wine, making it exceptionally versatile with a range of foods. But its distinct minerality makes it a natural match for fresh oysters, steamed mussels, scallops sautéed in butter, or light or medium-weight fish served chilled, like crudo or sashimi.

Serve chilled (52°F).
Winemaker
Gérard Tremblay and his wife, Hélène, inherited a little over 25 acres of Chablis vineyards from their families. By making superb wines and marketing them successfully, the couple has expanded their holdings to approximately 85 acres of producing vineyards, which they manage with their children, Maryline and Vincent. Locally, Gérard is regarded as a devoted grower: meticulous, hard-working and a quality leader of the region.
The Wine
This fine Chablis is fermented in stainless steel tanks, and 20 percent is matured in oak barrels to impart a bit of added body and the slightest hint of spice. It shows aromas of baked apple, chalk, lemon curd, honeysuckle, white peach and quince. In the mouth, it has vibrant acidity and minerality with edgy apricot, lemon curd, white peach, lime zest and limestone flavors.
