At the northeast end of the Napa Valley in the Mount Saint Helena foothills, Jericho Canyon is laid out over a rugged area between two fairly steep valley sides. The region benefits from very hot summer days that are tempered by cool nights and extremely chilly mornings, conditions resulting from a gap in the Mayacamas mountain range that enables coastal fog to seep in all the way to Jericho Canyon’s valley. The soils there are volcanic, clay loam and gravelly loam, which are both low-fertility and well-draining, promoting small, intense crops of very ripe fruit.
Pairings
Young Cabernet Sauvignon is ripe, concentrated and powerful. But as it gains a few years, as this one has, a fine Cabernet begins to show its tendency toward elegance and grace. Straddling the line between youth and maturity, this wine is wonderfully compatible with food. Consider unadulterated prime rib, a plainly broiled veal or lamb chop, a simple beef stew, or perhaps a flash-grilled steak. Not only are the flavors and textures an ideal match, the richness of grilled meat will help to cushion the tannic properties of this young wine.

Serve at cool room temperature (64°F).
Winemaker
Jericho Canyon Vineyard is a special place. Situated on craggy hillsides covered in native grasses and wild bramble, it was founded in the 1980s by Dale and Marla Bleecher. Originally given as a land grant to a soldier for his service in the Civil War, the property is located on an old road to a silver mine and was immortalized by Robert Louis Stevenson in “Silverado Squatters.” While exploring their property, the Bleechers found evidence of a pre-Prohibition vineyard and decided to replant it in 1990 with Bordeaux varieties. Today their vineyard produces some of the valley’s most polished wines.
The Wine
Napa Cabernets are well regarded for the depth and exuberance of the dark, berry flavors, and this wine is no exception. But it also brings something else to the table besides deep layers of fruit. Thanks to the rocky, rugged area where it’s grown, the wine has a captivating earthy quality, with flavors like bittersweet chocolate, lavender and bramble. The force and intensity of the wine’s midpalate is unmistakable, but attentive winemaking kept the tannins from getting unruly, giving the wine a long, penetrating finish.
