Mendoza is the largest winemaking area in Argentina, accounting for 70 percent of its total wine production. It’s also one of the driest places on earth. With peaks 23,000 feet high, the Andes capture precipitation moving east from the Pacific, holding it in the form of snow and ice. Their gradual melting transforms this high desert into one of the world’s great wine regions. Half of this wine comes from Salta to the north, which boasts some of the highest-altitude vineyards in the world, bringing the enormous diurnal shifts that help wine grapes ripen while retaining great acidity.
Pairings
Because of its beguiling, yet potent floral character, Torrontes can be a challenging match for food. Being a lightbodied white, it obviously pairs with more delicate foods like fish or seafood. But tit also requires flavors that can stand up to its floral notes. Strongly flavored fruits work such as apples, grapefruits, peaches and pineapples work especially well. Consider using them in salads with a lemon-based vinaigrette to match the wine’s acidity. Likewise, potent herbs like cilantro, sage and rosemary have the high tones to compete with Torrontes’s surprising assertiveness.

Serve well chilled (45°F).
Winemaker
Juan Muñoz López left his home of Andalucia, in southern Spain, in 1952 to bring his family to Mendoza, Argentina, in search of new opportunities. The wine industry in Mendoza was just beginning to find its way and was familiar to López, as Andalucia has a long tradition of winemaking. The name Las Perdices means “the partridges,” after the birds that were seemingly ubiquitous on his land when he first obtained it. Today, the estate is managed by López’s sons.
The Wine
Torrontes did not originate in Argentina, but it has been there for centuries and has become known as the country’s own distinctive white grape. A cross between Muscat and a grape called Criolla Chica, it produces a light white wine with fresh flavors of melon and fruit with a highly distinctive, powerful floral overtone that surely comes from the Muscat. The wine’s body is delicate yet crisp, with brisk acidity and sharp focus, and it has an intense enough flavor to work as an outstanding aperitif.
