The Veneto is a large wine-producing region in northwestern Italy that extends from the Po River in the south to the Austrian border in the north and is sandwiched, east to west, between the wine regions of Friuli-Venezia Julia and Trentino-Alto Adige as well as the Adriatic Sea. While best known for the ever-popular and increasingly well-made trio of Soave, Valpolicella and Amarone, the region also produces some stellar examples of foreign grape varieties, most notably Merlot and Cabernet Sauvignon.
Pairings
Even with such a refined interpretation, Cabernet Sauvignon's power and flash are not always easy on food. Because of the muscle and complexity inherent in this varietal, it is helpful, when possible, to match Cabernet to dishes with more subtle, focused flavors. That way, the dish showcases the wine, allowing it to be the focal point of attention. Since richer foods help to neutralize its tannins, Cabernet is best matched with meat, game and carefully selected cheeses.

Winemaker
Just north of Verona, in the rolling hills of the Valpolicella district, sits the 40-acre estate of Le Ragose. Arnaldo Galli and Marta Bortoletto acquired the long-abandoned property in 1969 and began the slow, determined process of building an international reputation for their outstanding and distinctive wines. Today, along with their three children who now oversee the day-to-day operation, the Galli family remains committed to honoring the traditions of this ancient viticultural area while carefully introducing modern technology, both in the vineyard and in the cellar.
The Wine
While its reputation has been established by its widely acclaimed Valpolicella and Amarone, in 1990, Le Ragose began producing small quantities of estate-grown Cabernet Sauvignon. In its 2005 offering, instantly recognizable Cabernet aromas of black currant, blackberry, graphite and mocha are joined on the palate by compelling notes of earth, fresh herbs and bell pepper. Unlike many wines today, which tend to be quite dense, this Cabernet is naturally light on its feet. Old-world elegance and refinement, coupled with ripe, well-balanced fruit is what Le Ragose is all about.
