Penley Estate is a medium-size winery and vineyard located in South Australia's famous Coonawarra winemaking district. Coonawarra is known for its unique red soils, or terra rossa, which yield memorable Cabernets. Other well-known wine districts in the region form a ring around the city of Adelaide: these include the Barrossa Valley, Eden Valley and McLaren Vale.
Pairings
Full-bodied Coonawarra Cabernets with grippy tannins match especially well with minty lamb dishes, rare steaks or beef stew.

Winemaker
The Phoenix name recognizes the first winemaking company purchased in 1888 by Douglas Austral Tolley. Today Douglas's great-grandson Kym Tolley continues the unbroken family winemaking tradition with Penley Estate. Tolley's wines show a restrained hand, starting with entry-level offerings like the Phoenix Cabernet. Its acidity and tannins balance out the fruit, creating a polished, vibrant example of classic Aussie Cab.
The Wine
The Phoenix is bright crimson with hints of dark purple due to its oak maturation and specific handling techniques. The fragrant aroma consists of ripe wild berry, blackberry and cassis, with notes of mint, eucalyptus and chocolate. Mulberry and blackberry are the dominant fruit flavors and are enhanced by a young, tight palate with silky grape tannins and elegant complex cedar oak--typical of the Penley style.
