The Padthaway region of South Australia’s Limestone Coast is far enough inland to be warm, so it can easily ripen Cabernet Sauvignon but still benefit from the Mediterranean climate of the coast. Its soil, like the nearby Coonawarra area, contains the famous “terra rosa,” an iron-rich loam over limestone substrate, which gives the Cabernet here its celebrated character of clean, bright fruit with polished, refined tannins.
Pairings
This bold, full-flavored red pairs beautifully with a wide array of robust, hearty dishes, but it really shines in the company of beef and lamb. While roasting works well, grilling the meat over charcoal is recommended as it adds a smoky, bitter component that complements the wine’s spicy, toasty oak aspects. While full-flavored, the Pillar Box Reserve also shows a softer side with balanced fruit and tannins that won’t overpower more delicate fare, such as pork, turkey or chicken.

Serve at cool room temperature (64°F).
Winemaker
As a newly married couple, Kim and Mark Longbottom founded Henry’s Drive winery in 1992 with a long-term commitment to estate-grown grapes. The winery is named after the 19thcentury mail coach service (run by one Henry John Hill) that ran through their bucolic property in Padthaway. Each of their wines bears a different name, such as Dead Letter Office, Morse Code and The Postmistress. A pillar box is a freestanding mail box, and the term was chosen for this line of wines, as Kim Longbottom writes, “In an age of instant gratification, the Pillar Box is a stoic reminder of the virtues of patience . . . Pillar Box Reserve can be enjoyed in its youth, but will reward the patient.”
The Wine
Grapes for this wine were harvested at maximal ripeness, fermented, and aged for 12 months in oak barrels (90 percent French, 10 percent American). At the conclusion of the maturation, the best lots of Cabernet are identified and then blended to form this reserve. A rich palate of black cherry and blackberry is accented with notes of herbs, violets and dark chocolate. Supple and round, the tannins carry the flavors deep into the finish.
