Located 30 miles south of Adelaide, South Australia's McLaren Vale is a narrow strip of land sandwiched between the temperate waters of the Gulf of Saint Vincent and the Southern Mount Lofty Ranges. Long ago recognized for its Mediterranean climate, undulating topography and diverse soil types, the region was first planted with vines in 1838. Today McLaren Vale is recognized as one of the world's great wine-producing regions.
Pairings
Shiraz, while surprisingly versatile, prefers to dine high up the food chain, seeming most at home at the intersection of fat and protein. And Shirvington's 2007 effort is no exception. Its rich, slightly jammy and herbal characteristics provide a plethora of pairing opportunities, especially with robust braised dishes and virtually any grilled red meat. But for the non-carnivorous, this Shiraz is a satisfying accompaniment to mushrooms, eggplant, roasted fennel, sun-dried tomatoes and polenta, as well as most hard cheeses.

Serve at cool room temperature (62°F).
Winemaker
After years of extensive research and travel throughout Australia's major wine regions, Lynne and Paul Shirvington purchased 40 acres in McLaren Vale's Willunga district. In the winter of 1996, the Shirvingtons began planting vines in the clay and limestone soils of their Redwind Vineyard. The first commercial releases--a Cabernet and a Shiraz from the 2001 vintage--were received with rabid enthusiasm, both locally and internationally. Today, the talented young winemaker Kim Jackson handcrafts wines that maintain the label's unblemished reputation for quality, consistency and value.
The Wine
The grapes for this Shiraz were sustainably farmed at Shirvington's Redwind Vineyard and then 100 percent barrel fermented and aged for 14 months in American and French oak casks. The nose features blackberry, blueberry and black licorice with background notes of bay leaf, saddle leather, dark chocolate and dried orange rind. Opulent and intensely flavored, this Shiraz leads with plenty of black and blue fruit. The oak flavors are well integrated while balanced acidity provides both lift and definition. Substantial but well proportioned, it is ready to drink now but will continue to improve for another five to 10 years.
