Even though 80 miles of French countryside separate it from the rest of Burgundy, Chablis is considered a part of that region and, in fact, produces some of its most prized white wines. Chablis is characterized by its very cool northerly climate and distinctive soils, which combine limestone, clay and fossilized sea shells, with outcroppings of the same chalk layer that extends through parts of the Loire Valley and across the channel to Britain’s white cliffs of Dover.
Pairings
Chablis is known for its full and slightly chalky mouth-feel as well as its bright acidity. Young or more crisply styled offerings pair especially well with raw or lightly cooked shellfish, but can also provide a refreshing counterpoint to full-flavored seafood dishes. Richer Chablis can complement simply prepared poultry dishes, or the regional classic baked escargot in garlic butter, but the lively 2009 Simonnet-Febvre seems best suited to seafood pairings.

Serve slightly chilled (50°F). Do not over chill.
Winemaker
Simonnet-Febvre was founded in 1840 by Jean Febvre, a barrelmaker. In the early days, the domaine was known for its sparkling wines. But over the years, the Febvres acquired holdings in some of Chablis’s most coveted areas and focused on producing exceptional still wines made from 100 percent Chardonnay. In 2003, Maison Louis Latour purchased Simonnet-Febvre, completely renovated the winemaking facilities and implemented sustainable vineyard practices—changes that have had a very positive impact on quality.
The Wine
At a latitude of 48 degrees north, Chablis’s variable and uncertain climate is at the outer limits of viticulture. Vicious spring frosts naturally limit yields, and there’s always a question of whether grapes will reach full maturity in a given vintage. While there are some plantings of other grape varieties, Chablis is all about Chardonnay. In good vintages and where vineyard sites are carefully selected, entry-level Chablis can offer tremendous value. As such, the 2009 Simmonet-Febvre delivers a very satisfying combination of fresh citrus and slightly under-ripe stone fruit, along with nuances of wet rock and unsalted butter. It is supple in the mouth, with brisk acidity providing lift.
