Twenty minutes north of Vienna sits the majestic, 900-year-old monastery of Stift Klosterneuberg. Currently home to 50 Augustinian monks from around the world, it was founded as a collegiate church by Margrave Leopold III in 1114, and has run continuously, except for a brief period when the order was disbanded by the Nazi regime. Today, it is not only an awe-inspiring cultural and spiritual center, it remains the oldest and largest winery in all of Austria.
Pairings
While the 2007 Chorus would sing in harmony with many richer vegetarian dishes, most notably leafy greens and eggplant, it really calls for flavorful red meats, such as lamb, beef and venison. Cabernet-based wines, like this one, work well with bridge ingredients such as mushrooms, olives, Italian herbs, walnuts and black pepper.

Serve at cool room temperature (64°F). Decant one hour before serving.
Winemaker
Over 900 years ago, canons first penned the business plan establishing winery operations as an ongoing means of financing the abbey. Now, bringing nine centuries of collective experience, Stift Klosterneuburg still produces wines from its 260 acres of vineyard land scattered across southern Austria. In addition to estate holdings in Klosterneuburg, the monastery also owns vineyards in viticultural regions of Vienna, Gumpoldskirchen and Tattendorf, each contributing unique characteristics to the finished wines.
The Wine
Approaching Stift Klosterneuburg by car, road signs welcome visitors with "Wo sich Himmel und Erde Begegnen," or, in English, "Where Heaven and Earth Meet." Those words are also an appropriate description for the wines the monastery produces. Klosterneuburg's 2007 Chorus consists mainly of Cabernet Sauvignon, which is blended with Merlot, Cabernet Franc and St. Laurent. Heavenly aromas and flavors of blackberry, cassis and vanilla give way to more earthly attributes including forest floor, juniper berry, black licorice, milk chocolate and lightly roasted coffee. It offers a plush and richly textured mouthfeel and ripe, well-integrated tannins.
