California is the world's fourth-largest wine producer—after France, Italy and Spain—and accounts for 90 percent of North America’s total production. Stretching 840 miles between the borders of Mexico and Oregon, the state is home to 543,000 acres of vineyard, 3,500 wineries and 112 federally sanctioned American Viticultural Areas. California currently produces 212 million cases of wine annually, of which 51 million are exported to 125 different countries.
Pairings
For pairing purposes, this dry blush, or rosé, should be treated like a medium-bodied white wine. While it can be served as a refreshing aperitif, it is also an amiable companion to most seafood, poultry, white meats and light pasta dishes, as well as the bounty of summer and fall vegetables. Combining the best attributes of red and white wine, the Azur Rosé offers both crispness and plush fruit, which will complement many Mediterranean-style dishes seasoned with garlic, olive oil, herbs and spices.

Winemaker
Azur Winery is a coalescence of French and American culture. While living and studying in the Loire Valley, Elan—an American and a lover of all things —met Julien Fayard. Julien grew up around wine at his family’s estate in France’s Côtes de Provence region. He furthered honed his winemaking skills by working at the Bordeaux icons of Chateau Lafitte and Smith Haut Lafite. Elan and Julien eventually got married, settled in the Napa Valley and started Azur.
The Wine
For a winery to use a particular AVA on its label, at least 85 percent of the grapes that go into making the wine must be grown in the specified appellation. Since 60 percent of the grapes that went into the 2011 Azur Rosé come from Napa Valley, and 40 percent from the Sierra Foothills, it must use the more general “California” designation. Made from an unusual blend of Syrah (90 percent) and Semillon (10 percent), the bright and complex nose features red cherry, yellow plum, underripe pineapple and citrus blossom. On the palate, wild strawberry, cranberry and dried citrus flavors are supported by chalky minerality and brisk acidity.
