The heart and soul of the California wine industry, Napa Valley is 34 miles long, running north to south, and is defined by mountain ranges and its proximity to the Pacific Ocean. Its temperate climate, coupled with over 30 different soil types, make Napa Valley one of the world’s premier wine regions. Within “The Valley,” there are 16 distinct American Viticultural Areas (AVA s), each with a unique microclimate, running from the warm, dry Calistoga at the valley’s northern end to the cool, windy and foggy hills of Carneros, set right up against San Pablo Bay.
Pairings
This wine is at its best with simply prepared fish and chicken dishes, as it has the ability to hold its own flavor without interfering with the taste of the food. Because of its delicacy and crispness, it is also a natural with oysters and shellfish. While tihs may sacrifice some of the wine’s subtle nuances, it can also be used to cut through rich butter and cream sauces. Serve lightly chilled (56°F).
Winemaker
This wine is a labor of love for David and Katharine DeSante, a husbandand- wife winemaking team who bring years of expertise and an artful touch to every project they take up. After earning a masters in oenology from UC Davis and working in as far flung places as Western Australia and Bordeaux (Château Lafite), David has made a name for himself in Napa as a hired winemaker for such vineyards as Tierra Roja, Jaffe and Source Napa.
The Wine
For years, David DeSante had his eyes on a parcel of old-vine Chardonnay in Jack Varozza’s vineyard in Napa Valley. DeSante thinks of the north half of the Varozza vineyard as a “vine museum” due to the fact that most of Napa Valley has been replanted within the last 15 years. By contrast, these Chardonnay vines were planted in 1973. A few years ago, DeSante approached Varozza with the idea of making a Chardonnay from these grapes. Today, DeSante harvests the fruit ripe, but prevents the occurrence of malolactic fermentation (which creates the buttery, creamy flavors in some wines) to keep a bright, refreshing line of acidity and crisp minerality. Notice aromas of fresh pear and honeycomb that lead to hints of citrus zest and a chalky, mineral texture.
