A sub-appellation of France's Languedoc-Roussillon region, Limoux (Lee-moo) is located in the eastern foothills of the Pyrenees, 10 miles south of the spectacular medieval city of Carcassonne. The area has been long known for its affordable sparkling wines and wide plantings of the Mauzac grape. Thanks in part to an influx of British and Australian winemakers, Limoux is seen as a viticultural hot spot for Chablis-like Chardonnay, which flourishes in the relatively cool climate and complex soils.
Pairings
This Chardonnay from Domaine Begude offers a myriad of pairing opportunities. It's perfect with light and delicate food such as raw and lightly cooked shellfish including oysters, crab and prawns, but will also stand up to richer seafood dishes. Also consider, fish paté, chicken terrine and lighter pastas, especially those featuring shellfish with spring vegetables.

Winemaker
At an elevation of 1,100 feet, the idyllic estate of Domaine Begude sits amid the rolling hills of Limoux. The proprietors are London refugees James and Catherine Kinglake who, in 2003, swapped their big-city lifestyle for the more relaxed pace of tending 72 acres of vineyard. "Vines have been thriving on the property since the 16th century," says the happy couple, "and with our organic approach to farming, they will continue to be here for many centuries to come." To make the wine and oversee day-to-day operations at the winery, the Kinglakes hired Laurent Girault. Having made wine all over France, as well as in Central Otago, New Zealand, Girault brings a world of experience to this noble project.
The Wine
Alone in a sea of primarily red-producing regions, Limoux's unique topography, complex soils and proximity to the Mediterranean create ideal conditions for the slow, even ripening of Chardonnay and other wine grapes. Another key to Begude's success is that all the grapes are grown and harvested within five minutes of the winery. This reduces oxidation and insures the freshness and vitality of the fruit. The 2009 Terroir Chardonnay reflects this with crisp citrus and floral notes coupled with apple, pear, honeydew melon and an enchanting almond note. It features pleasing weight and texture with a crisp and minerally Chablis-like finish.
