Napa Valley is the heart and soul of the California wine industry. Running north to south, the valley is 34 miles long and defined by mountain ranges and its proximity to the Pacific Ocean. Its temperate climate, coupled with over 30 different soil types, make Napa Valley one of the world’s premier wine regions. Within “The Valley,” there are 15 distinct American Viticultural Areas (AVA s), each with a unique microclimate, running from the warmer, drier locale of Calistoga at the valley’s northern end to the cool, windy and foggy hills of Carneros, set right up against San Pablo Bay.
Pairings
With its relatively moderate tannins, this blend of Cabernet and Merlot is more versatile than either would be on its own. Its intense, focused palate asks for a meat dish of the same concentration, so red meat—from grilled steak to tender short ribs—will be well served by the wine’s forward fruit and acidity. But given the soft, rounded tannins supplied by the Merlot, lighter meats like veal and pork will also work well. Fortify them for the wine’s charge by seasoning amply with dried herbs or garlic, or saucing them with a jus or red wine reduction.

Serve at cool room temperature (64°F).
Winemaker
The Gentleman Farmer brand is an extension of the partnership that originally started Poem Cellars, made up of a couple of Napa-based hoteliers and the wine director of one of Napa’s top restaurants, the Michelin-starred La Toque. Poem Cellars’ wines are smalllot Cabernet Sauvignon-based blends meant to bridge the gap between Napa’s penchant for overwhelmingly large showcase wines and the requirements of the table (a sensitivity, no doubt, close to the heart of the sommelier in the founding trio). The name Poem Cellars derives from a passage from Robert Louis Stevenson about wine in California, which he called “bottled poetry.”
The Wine
This blend is inspired by Bordeaux’s right bank in that it reduces the percentage of Cabernet Sauvignon found in Poem Cellars’ other wines and elevates the portion of Merlot, with just a touch of Cabernet Franc. Notable for its sheer focus and restraint, the wine’s aromatics suggest red currant, spiced cherry and cranberry backed by accents of camphor and tobacco. On the palate black fruits emerge with tastes of cassis, plum, cocoa nibs and spicy oak. With an abundance of flavor and complexity expertly contained in a tightly controlled, focused palate, the wine is excellent for the table, as it will complement many dishes without overwhelming them.
