Weinviertel, whose name means “wine district” in German, is Austria’s largest winegrowing area, with more than 20,000 acres under vine. Located north of Vienna, the Weinviertel is of Lower Austria, the country’s premier wine sector. The rolling hills feature soils mostly comprised of loess, rock and calcareous clay, and the climate is moderate, with relatively mild winters and large diurnal swings between warm and cool during the growing season.
Pairings
Aromatic, fruity and dry, rosés succeed with foods that might flummox many reds and whites. Green salads, especially with a bit of fruit or a sweet vinaigrette, are a good match. A chilled rosé also works as a refreshing counter to smoky barbecued beef ribs and to all manner of bright, exotically seasoned Asian foods.

Serve lightly chilled (56°F).
Winemaker
Located fewer than 50 miles north of Vienna, the Hardegg Family’s castle and vineyards lie close to the border of the Czech Republic. The castle dates back to 1188 and has been in and out of the hands of the Hardegg family ever since. Organic viticulture has been important here for decades, and in 2006 the estate made the conversion to biodynamic farming to maximize the expression of the grapes. Fermentations are handled naturally and maturation takes place in classic oak casks.
The Wine
This dry rosé from Graf Hardegg is a new product, taking the flavor-packed Cabernet Sauvignon grown on the estate and extracting just the brightest hint of color and taste for something truly refreshing and accessible. Flavors of strawberry and cherry are lifted with hints of rosemary, spice and citrus zest. A crisp, dry mouthful for a warm day, the wine is delightful and charming with a juicy, long-lasting finish.
