The Santa Ynez Valley is an American Viticultural Area (AVA) 35 miles northwest of the city of Santa Barbara, Calif. It is part of the larger Central Coast AVA and contains the greatest concentration of wineries in Santa Barbara County. The west end of this 40-mile-long valley is defined by the cool coastal influences of the Pacific Ocean. But as you move inland, temperatures and elevations increase, resulting in considerably warmer and drier conditions in which red Bordeaux varietals flourish.
Pairings
With more finesse than most young California Cabernets, the 2008 Three Saints still brims with powerful, rich flavors and youthful exuberance. As such, it appreciates sharing the table with primary ingredients like simply prepared lamb chops or a New York steak. The smoky, seared quality that comes from grilling meat over charcoal builds another bridge between the food and wine.

Serve at cool room temperature (64°F).

Winemaker
The Three Saints Cabernet Sauvignon comes from Star Lane Estate, which got its start in 1996 when Jim and Mary Dierberg’s fascination with fine wine led them to California. Even though they already owned a historic winery in their home state of Missouri, they fell in love with a 4,000-acre ranch in the back country of south-central California, which is now part of the Santa Ynez Valley’s recently sanctioned appellation known as Happy Canyon of Santa Barbara. Three Saints wines are crafted by Nick de Luca, former semi-pro mountain biker and recovering law student whose winemaking credentials include work at Williams Selyem, Fisher, Byington and Cline.
The Wine
The grapes for this red are grown in the easternmost edge of the Santa Ynez Valley. Varied elevations, exposures and soil types contribute essential elements to this blend of Cabernet Sauvignon, Cabernet Franc, Petit Verdot and Malbec. Featuring aromas of black currant, brandied cherry, graphite and tarragon, it is medium- to full-bodied with Bordeaux-like elegance superimposed over succulent red and black fruit flavors. Subtle nuances of toasty vanilla, smoke, chocolate and dried herbs add complexity. This unusually satisfying wine is a profound case of overachievement for the price point.
