Home to some of South America's oldest vines, Maipo Valley is Chile's most famous wine-producing area. Located within the Metropolitan Region of Santiago, it is a sub-district of the larger Central Valley appellation, bound by the Andes to the east, the Coastal Range to the west and the Maipo River to the north. Its fast-draining, alluvial soils and sunny, dry growing season consistently produce wines of exquisite ripeness and balance, including Cabernet Sauvignon, Merlot and Carmenère.
Pairings
More than most other red grapes, Carmenère pairs well with fresh herbs, and its intrinsic green aspect plays wonderfully with spicy sauces, like salsa verde or South America's beloved chimichurri. Chocalán Carmenère is the perfect companion for a well-seasoned, herb-encrusted steak. It also makes it an ideal match for many vegetarian dishes, most notably eggplant and stuffed bell peppers.

Serve at cool room temperature (62°F).
Winemaker
As if the legendary Chilean businessman Guillermo Toro didn't have enough going on, in 1996 he decided to follow his dream and expand the family enterprises to include vineyard holdings and wine production. After an exhaustive two-year search, Toro bought 830 acres of pristine land in the remote hills of Maipo Valley, just outside the town of Melipilla, and planted 145 acres with 13 different grape varieties. The first commercial wines under the Viña Chocalán label were released in 2003. Now all five of Toro's children are actively involved in winery operations as they set about the business of crafting some of South America's finest wines.
The Wine
Once widely planted in France's Bordeaux region, Carmenère was decimated by phylloxera--a nasty root louse that destroyed virtually all of the vineyards of Europe in the late 1860s--and the varietal was thought to be extinct. But, having long been confused with Merlot, it was discovered 130 years later, thriving in the valleys of Chile. The 2009 Chocalán blend of Carmenere (85 percent), Cabernet Franc and Cabernet Sauvignon offers intense blackberry, black currant and huckleberry aromas, along with notes of camphor and dried herbs. Exuding supple flavors of dark fruits, blood orange and sage, this is a very fresh and clean expression that plays down Carmenère's intrinsic peppery character.
