The various wine districts of South Australia surround the city of Adelaide. The Barossa Valley is a major wineproducing region and tourist destination and the most renowned grape-growing district in the country for robust Shiraz. Settled more than 165 years ago by British and German immigrants, the Barossa is home to some of the oldest Shiraz vines in the world.

The profusion of flavors in this Shiraz welcomes foods that are every bit as intense. Seared beef, roasted lamb and game birds with fruit compote will offer a fine balance to the wine’s elaborate flavors and textures.

Serve at cool room temperature (64°F).

WINEMAKER THE WINE

After 29 years as the winemaker of famed Penfolds winery in Australia, John Duvall started his own label in 2003, working with fruit sourced from old-vine vineyards in the Barossa Valley. While John consults for a number of wineries in Europe, South America and the United States, he spends an uninterrupted four months each year in the Barossa Valley making wines according to his own vision. Last year, the 2006 Entity Shiraz won the trophy for the Best Barossa Valley Red at London’s prestigious International wine challenge.

This well-crafted, structured Shiraz is packed with notes of cassis, sage, coffee, black raspberry, chocolate, graphite, tea leaves and forest floor. Its firm tannins and bold acid keep this wine from overwhelming the palate. The length ends on notes of dark fruit and spice.
