Sablet is one of several villages in the southern Rhône Valley that produce wines that are a cut above simple Côtes du Rhône quality. The local soils are made up of a combination of clay, flint and limestone. Grenache is the most important grape in this region, but it’s often blended with some Syrah, Cinsault and Carignan. The very prestigious Grenache appellation of Gigondas adjoins the village of Sablet.

This seamless, easy-drinking red is a nice accompaniment to roast chicken, a grilled pork chop or even a good sandwich.

Serve at cellar temperature (59°F).

WINEMAKER THE WINE

Domaine de Cabasse is owned by Alfred and Antoinette Haeni, who have been making wine for about 20 years and also operate a small hotel and restaurant on the property. For the most part, Alfred oversees the vineyard and winemaking while Antoinette manages the rest of the business.

Half of this wine is made and matured in stainless steel tanks and the other half in oak before it is blended. The result is a wine that is not overtly woody, just spicy, with a core of fresh red fruit. It has violet, dried rose, brandied cherry and red currant aromas and silky, soul-satisfying cherry, plum, clove and lavender flavors.
